With a name like Chef King, ruling the kitchen is something that is expected to come naturally. And for new executive Chef King Heun Wai of the Casino Caribbean, that is exactly the case.
After more than 30 years of cooking experience, the Hong Kong native now calls Kirkland’s casino home. Currently featuring a menu with almost 100 items, authentic Asian cuisine is required to keep customers coming in the door.
Wai has garnered the attention of local and national awards, as well as being recognized as one of the top 100 Chinese cooks in America several years in a row.
When asked the secret to his success, Wai is quick to point to his ingredients. “Asian food is about being authentic with whatever you are cooking. Whether it is Mongolian Chicken or Crab with Black Bean Sauce, I try to let the ingredients do the work. If you are using quality ingredients, your customers will know.”
